Its production has its roots in the history of the island, when the Arabs introduced sugar cane in 800 AD, and Frederick II of Swabia, during the Norman domination, contributed to increasing the cultivation of sugar cane, calling it the "white gold" of Sicily. Although Sicilian sugar production suffered a slow decline in the 1600s, the tradition survived only in Avola, thanks to the will of the Marquises Pignatelli Aragona Cortes, who continued the production of sugar and started the distillation of rum in 1700.
